Lemongrass Oil

Ingredients:

          0.25 cup Lemon Grass chopped
0.5 cup Oil, Grapeseed
1.0 pinch salt

Instructions:

Use the lemongrass leaves here, not the stems/stalk. Clean it very well with a vinegar solution to kill any bacteria and dry completly.

Place the oil and lemongrass in a blender and process untill the lemongrass is very, very fine and the liquid is emerald green.

Put through the finest strainer you have, I used a superbag.

This is a very intense oil. Use sparingly.

  Servings: 12
Prep Time: 5 minutes
Lemon Tarragon Sorbet

Ingredients:

    Default
2.5 cup water
1.0 cup Sugar
1.0 cup Lemon Juice
1.0 tablespoon Tarragon
1.0 tablespoon Lemon Verbena

Instructions:

In a small saucepan, bring the water and sugar to a boil over high heat";@ stir to dissolve the sugar. Chill. Add the lemon juice, tarragon and lemon Verbena. Freeze in an ice cream maker according to manufacturer's directions.

9/2004 --- I made it with the lemon Verbena this time, and .... I felt there was too much of a lemon taste, over powering the taragon. I'd leave the Verbena out in the future... Everyone else liked it.... just my opinion
